The Elyvora restaurant is built around the conviction that the finest food in this region is already here, grown in the soil of the Taurus foothills and pulled from the Mediterranean. Our kitchen finds it, treats it honestly, and presents it in a room lit to match.
The menu changes with the season and the market. Olive oil pressed nearby. Herbs that come in from the garden in the morning. Fish that does not travel far. The cooking is precise without being showy.
Dinner is served at the pace the guest sets. There is no second seating. There is no rush. The room was designed to encourage lingering, and so it does.

The Elyvora bar occupies a long room at the edge of the terrace, designed so that the Mediterranean can always be seen at the end of it. The light changes here in a way worth sitting still for.
The drinks list draws from Turkish viticulture — a tradition of real quality and underappreciated depth — alongside a selection of spirits chosen for character rather than label. Cocktails are few, well-made, and grounded in the local botanical palette.
Open to guests and to those dining at the restaurant from early evening. No reservation is required, though our team can arrange a preferred table on the terrace on request.
A small selection of cold dishes and mezze is available throughout the evening for those who prefer to eat lightly and drink well.
The bar closes when the last guest is finished. We have not set an official closing time and do not intend to.
